General tips:

 

Blender or juicer?

When a recipe calls for the juice of some fresh fruit or vegetable, you can make them either with the blender or the juicer. In the first case you need to add water before processing and then strain the juice, in the second case you need to add the same amount of water after extracting the juice.

In both cases you can use the strained pulp for other recipes.

 

The zest of fresh ginger

Fresh ginger is a great addition to your drinks and cocktails. It stimulates digestion, strengthens the immune system, and gives a "hot" taste that perfectly substitutes the alcohol used in several cocktails. Without the bad effects of alcohol!

You can make your ginger juice by processing a small piece of fresh ginger in the blender with some water, then strain the juice.  The pulp can be used in a variety of ways in many recipes (both sweet and salted).

 

Sugar or salt?

Fresh juices can be sweetened or consumed plain, or with a pinch of salt to stimulate the appetite.

Usually sweetened juices and drinks are not recommended after a meal because they may cause fermentation.

They can be used before a meal to reduce the appetite, or as a meal in themselves if you are on a diet or you need an extra boost of energy.

 

Milk or not milk?

Whenever milk is listed in the recipe, you can use either full cream milk or skimmed milk, or even substitute it with soya milk, rice milk, coconut milk or sesame milk.

 

Decorations

An attractive presentation greatly adds to the success of a drink. Here are some popular decorations: olives in a toothprick, candied cherries, cucumber, orange and lemon slices (make a cut from the center to the rind so that you can fix it on the glass border), lemon and orange rind (cut in spyrals), mint leaves, lemongrass leaves, edible flowers (i.e. non-poisonous), small radishes cut in fancy ways on a toothprick, etc.

You can also use various types of glasses, cups and bowls, or even scoop out the pulp from a pineapple, a coconut, a large grapefruit or a melon to use them as cups.

Colored straws are also attractive.

 

Sugar rings

The sugar ring decoration is very easy. Just wet the border of the glass, then dip it in icing, icing sugar or granulated sugar for a short time.

The icing can be colored with syrup.

You can also dip the glass border into cocoa powder.

The trick is to pour carefully the drink into the glass so that the sugar ring is not disturbed.

 

Mint Julep

 

Mix:

1/10 green mint syrup

3/10 lemon juice

3/10 sugarcane syrup

3/10 water

 

Orange Nectar

 

Half fill the blender with orange juice, add half banana, sugar to taste, and complete with milk cream or soya milk. Process until smooth and serve chilled.

 

Pear Cinnamon Milkshake

 

Half fill the blender with fresh peeled pear pieces, add sugar to taste, a good pinch of cinnamon, and complete with milk Process until smooth and serve chilled.

 

Tamarind Julep

 

Mix 1/10 tamarind syrup, 3/10 lemon juice, 3/10 sugarcane syrup, 3/10 water

 

Vanilla Lemon

Grape Juice

 

Half fill the blender with fresh white grapes, add a pinch of vanilla, the juice of 2 lemons, and sugar to taste. Process until smooth. Add water, ice and serve immediately.

 

Iced Orange Tea

 

Prepare 1/2 liter tea (hojika tea does not contain theine) and let it cool. Add 1 glass orange juice and serve with ice.

 

Apple Banana Shake

 

Put 1 ripe (peeled) banana and 1 peeled and diced apple in the blender. Add sugar to taste, 2 pitted dates, a pinch cinnamon, then fill with milk and process until smooth.

 

Strawberry Milk

 

Half fill the blender with fresh strawberries. Add sugar to taste, fill with milk and process until smooth. Serve chilled.

 

Mango Nectar

 

Half fill the blender with peeled mango (remove the seed), add sugar to taste, and fill with plain yoghurt. Process until smooth.

 

Soy Milk and

Peanut Drink

 

Prepare 1/2 liter soya milk and blend with 2 spoons peanut butter and one small banana. Add sugar to taste. You can top with a scoop of ice cream.

 

 

Mango Tangerine Sharbat

 

Pour 4/10 mango juice in the glass, then slowly add 4/10 tangerine juice.

Pour about 2/10 sugarcane juice, without mixing.

Serve chilled. You may decorate with candied tangerine peels.

 

Papaya Ginger Drink

 

Mix 5/10 papaya juice with 2/10 fresh ginger juice (from 50 gr fresh ginger) and fill with sugarcane juice.

 

Banana Lassi

 

Put one medium sized (peeled) banana in the blender with 1 spoon of brown sugar and a pinch of cinnamon (optional).

Fill with fresh plain yoghurt and process until smooth. Serve chilled.

 

Red Berries Lassi

 

Fill the blender for 1/3 with red berries of your choice (strawberries, gooseberries, raspberries etc, or a mix of these), add 1 spoon of sugar. Fill with fresh plain yoghurt and blend until smooth.

 

Orange Syrup

 

Peel 1 kg oranges and remove the white part. Finely chop 3 spoons of the orange part.

Extract the juice from the oranges and process it with the peels until smooth.

Put the mix on the fire with about 300 gr sugar and simmer on a low fire until the syrup has cooked down to half. Strain and bottle, keep in the fridge and dilute when needed.

If you want to keep it longer at room temperature, seal the bottle and pasteurize it.

In the same way you can also make Lemon Syrup and Tangerine Syrup.

 

Raspberry Syrup

 

Blend 500 gr fresh raspberry with 1 liter water, then simmer with 300 gr sugar until the syrup has cooked down to half. Strain and bottle, keep in fridge. If you want to keep it longer at room temperature, seal the bottle and pasteurize it.

You can make Strawberry Syrup and Pomegranate Syrup in the same way (pink color). Kiwi syrup will be a light green color.

 

Coconut Pineapple Nectar

 

For this recipe it is better to use fresh coconut. Grate about 200 gr fresh coconut meal, then put it in the blender with 1/2 liter pineapple juice and 2 spoons brown sugar and process until smooth.

At this point add 2 spoons fresh milk cream (or thick soya milk), mix well and serve chilled.

 

Herbal Teas

 

The variety of herbal teas is practically endless. We may mention some of the most interesting:

- red hybiscus (karkadé)

- chamomile

- wild rose hip

- lemongrass

- linden flower and vanilla

 

Cinnamon Chocolate

 

Chocolate drinks are also very popular and have several recipes. You can also find several ready mixes on the market.

To make your own, heat 4 spoons cocoa powder with 3 spoons brown sugar in 1/2 liter milk. Add a pinch of ground cinnamon.

To get a thicker chocolate, you can add 1 spoon cornstarch to the cocoa powder and 50 gr chocolate bar.

 

   All non-alcoholic drinks

All the drinks of this page are non-alcoholic (as all the recipes of this website) and as such they can be served to everyone, including children.

For a better health, the recipes of the website also do not recommend caffeine, theine or commercial soft drinks (only made with artificial colors and flavors, preservatives and white sugar).

We have used soda water, Ginger Ale (good quality), non-alcoholic Bitter (good quality), and hojika tea (without theine), but you can choose to skip them and simply use water instead.

The syrups mentioned in the recipes are intended as good quality syrups (with natural extracts), preferably home-made. See for example Orange Syrup, Lemon Syrup, Raspberry Syrup and Pomegranate Syrup in this page.

You can also use good quality essential oils (food grade) and powdered extracts, especially for White Mint, Vanilla, etc.

 

Jamalac

 

Mix together

1/10 pomegranate syrup

1/10 white mint syrup

1/10 lime juice

3/10 non-alcoholic bitter

4/10 tonic water

and serve chilled.

 

Carrot Apple Juice

 

Put 2 small carrots in the blender (or juicer) and process.

To 4/10 of diluted carrot juice add 4/10 bottled apple juice, fresh lemon or lime juice to your taste, sugar to your taste and fill with water or soda water.

You can also serve this drink without sugar, as an appetizer.

 

Almond Milk

 

Almond milk is a very good and nutritious drink, easier to digest than milk.

Soak 200 gr almonds in water for one night, then process them in the blender with a little water until smooth. Pour the almond puree in one liter of boiling water, turn the fire off and cover the pot. Let sit until the water has cooled.

Strain and serve as it is, or use for fancy cold drinks, for example:

 

Mint almond milk

To your glass of almond milk add sugarcane syrup to your taste, and a small bunch of chopped fresh mint leaves.

 

Lemon chilli almond milk

To your glass of almond milk add a good pinch of salt, a pinch of red chilli powder and the juice of one lemon. Stir well and serve chilled.

 

Grapefruit Punch

 

For this cold punch mix:

3/10 grapefruit juice

2/10 orange juice

1/10 lemon juice

2/10 passion fruit juice

1/10 coconut milk

1 spoon brown sugar

1 spoon fresh ginger juice

1 teaspoon raspberry syrup

 

Pomegranate Drink

 

Mix:

2/10 lime juice

4/10 pomegranate juice (strained)

1/10 sugarcane syrup

Fill with chilled water.

  

Lemonade

 

The classic lemonade made from fresh lemon juice is always the best health drink. You can sweeten it with sugarcane syrup or plain sugar, or also add a pinch of salt.

Squeeze at least 1 lemon for each glass, then add chilled water and ice and stir.

 

Guava bitter

 

Mix:

4/10 guava juice

2/10 non-alcoholic bitter

2/10 tangerine syrup

Fill with fresh water/ice cubes.

 

Green Fairy

 

Mix:

3/10 fresh spinach juice (from 150 gr spinach)

3/10 green mango juice (from 200 gr green mango)

1/10 fresh ginger juice (from 50 gr ginger)

1/10 lemon juice

Fill with water or soda water.

Add sugar or salt to taste, ice cubes, and serve.

 

Fruit Cocktail

 

Mix

4/10 apricot juice

2/10 mango juice

2/10 orange juice

1/10 lime juice

1/10 sugarcane syrup

 

Pink Pineapple

 

Mix

5/10 pineapple juice

3/10 melon juice

1/10 gooseberry syrup

1/10 ginger syrup

1 teaspoon brown sugar

 

Carrot Tomato Juice

 

Carefully pour into each glass:

5/10 diluted  carrot juice

3/10 tomato juice

1/10 tangerine juice

1 spoon fresh ginger juice

1 teaspoon sugar or a pinch of salt

Do not mix if you want a layered colors effect.

 

Coconut Milk Shake

 

Blend together until smooth:

1/10 skimmed milk

1/10 coconut ice cream

6/10 coconut milk

2/10 sugarcane syrup

 

Kiwi Crustas

 

Carefully arrange into the cocktail cups:

1 kiwi, sliced

1 orange, sliced

1/4 lime juice

1/4 sugarcane syrup

2/4 kiwi syrup

1 spoon of fresh ginger juice

 

 

Piña Colada

 

Mix well half pineapple juice and half coconut milk.

Add water and sugarcane syrup to your taste.

 

Paw Paw Smash

 

Pour in the glasses:

3/10 papaya juice

3/10 mango juice

1/10 lime juice

1/10 passion fruit syrup

Fill with Ginger Ale or Soda Water.

 

Ginger Cider

 

Pour in the glasses:

5/10 concentrated apple juice

4/10 soda water

1/10 fresh ginger juice

Serve immediately

 

Pineapple Punch

 

Mix

2/10 pineapple juice

2/10 orange juice

1/10 sugarcane syrup

1/10 lemon juice

1 spoon fresh ginger juice

 

Platana Punch

 

4/10 coconut milk

1 ripe banana

2/10 papaya juice

1/10 sugarcane syrup

1 spoon milk cream

 

Orange Passion

 

5/10 passion fruit juice

4/10 orange juice

1 spoon fresh ginger juice

1 spoon orange syrup

 

Coco Lime

 

Mix

5/10 green coconut water

1/10 lime juice

1/10 fresh ginger juice

1/10 sugar syrup

 

Tampico Cocktail

 

Mix

4/10 orange juice

1/10 tangerine syrup

1/10 almond syrup

2/10 lemon juice

Slowly add

2/10 non-alcoholic bitter

 

Caramel Banana Shake

 

Blend 1 ripe banana, with

2 spoons caramel

3/10 soya milk

3/10 coconut milk

Sprinkle 1 spoon ground nuts on the top.

 

Coco Lichee Fizz

 

Mix

4/10 lichee juice

4/10 coconut milk

1 spoon sugar

Fill with soda water

 

Passion Fruit Cup

 

Arrange in 4 cups

1 passion fruit, scooped

1 pomegranate grains

5/10 passion fruit juice

2/10 pineapple syrup

1/10 lime juice

 

Exotic Sangria

 

Fill the cup by half with bits of exotic fruis - papaya, mango, kiwi, lichee, kiwi, pineapple, tangerine.

Pour:

1/10 sugarcane syrup

1 spoon lemon juice

1 spoon orange juice

6/10 bottled grape juice

1 pinch cinnamon

1 pinch cloves

1 pinch vanilla powder

 

Citrus cocktail

 

Mix

5/10 grapefruit juice

2/10 orange juice

1/10 green celery juice (diluted)

1/10 spinach juice (diluted)

1/10 fresh ginger juice

 

Jamaica Milk Shake

 

Blend

1 ripe banana with

4/10 passion fruit juice

1/10 vanilla ice cream

2/10 plain yogurt

1 pinch cinnamon

1 pinch nutmeg

 

Ice Cream Punch

 

Fill by half the cups with fresh exotic fruit - papaya, kiwi, pineapple.

Add a few raisins.

Add a spoon of vanilla ice cream.

Fill with tangerine juice.

Top with a little more ice cream.
